Happy Fall!


My friend, Emily, showed me this awesome recipe for making homemade apple pie INSIDE apples! The apples are the bowls! We got together on Saturday while the boys watched fights, we made apple pies! They turned out so delicious! The only thing they were really missing was the vanilla ice cream. Here are the pictures!
This is Emily. We are cutting around the apples, leaving a 1/4 inch boarder to be the "bowl".

We mixed all the pieces we cut out together and mixed them with flour, sugar, cinnamon, nutmeg....all the good stuff! Then, we filled them back into the apples. Don't they look amazing?!We made the crusts, used cookie cutters to make them cute, and just placed them on top.The final step- baking for 30 minutes. This was after they'd been sitting out for awhile, but they were amazing. The crusts were a little too crunchy for my taste, but I know how I'd fix that next time. Overall, super fun to make, and even more fun to eat!!

Back to the Burg, but not for long!

A few new fun updates!

1. We are officially moving to Utah this December! We could NOT be happier about it! We realized that Eduardo needed an English class we were unaware of before in order to transfer to Provo, and he can't continue in his major here in Idaho until he completes his internship. As blessings typically go, when we needed it most, he was offered a great job with a buddy down in Provo that not only pays decently (for us crazy college kids) but also counts as the internship! The plan is for him to take the English class online while completing the internship. This way, if he gets accepted to Provo for the fall next year-wonderful! If not, we will be able to come back to Idaho for him to finish (but let's all just pray he gets accepted so we can stay in Utah!)

2. Not nearly as exciting, but we completely re-did our kitchen table! It was a very nice wedding gift from my cousin when we got married since they had outgrown it, but we were ready for a change. I've wanted a nice stained and black table, but unfortunately, school is way too expensive, so we haven't been able to splurge on cute furniture yet. My sweet hubby decided we should just do it ourselves, so we did :) We sanded it all down, painted the legs black, stained the top wood a dark walnut, tore out the tiles to lay in black ones we picked out, and found black caulking to fill it in with! It took two weeks to completely finish since our time is limited, but it turned out so beautiful! I can't stop looking at it :) Here are the pictures of our craftiness.

(Yes, I wore swimming goggles. After seeing how fast/hard the pieces of tile were flying off when we broke them, I was not about to lose an eye or scratch my sunglasses!)

I guess those are really the only things to update thus far!

The end is near!

Well, our summer in Kentucky is almost at its end! Once again, we are filled with completely mixed feelings. It was a hot, hard summer. But, it was also a really fun summer. We're really grateful we were able to both work full-time and save for school. Plus, it gave us a few months of spending a lot (and I do mean A LOT) of time together-good thing we like each other so much, eh? :)








So...to fill in on the big events that took place this summer:


1. We got a kitten! We got her during the Memorial Day weekend in May. We had just read the Hunger Games series and Eduardo thought she looked like Prim Rose, so that's what we named her. Prim's already grown a lot, and is super cute, but I'm not going to turn into one of those people who sits and blogs about her cat since she has no kids quite yet.



2. My mom came to visit for nearly a week! Eduardo was working such crazy long hours, we were getting at best 4 hours a day together, half of which was spent cooking/eating/cleaning etc. My mom couldn't have come at a better time, and we couldn't have needed those two days off more. She came with Aubrey's mom (Aubrey and Eddie Barlow are our friends who also came out to work for Bull's Eye this summer. Eddie is a salesguy). Anyway, they came out together for a few days so we partied :)


We all drove up to Ohio and went to Cedar Point for a day. We seriously lucked out! It had been in the low hundreds the week before and the week after she came, but while she was here in was in the high 80's and low 90's. When we went to the theme park it was relatively empty so we were able to get on all the rides we wanted, and even go on our new favorite roller coaster three or four times. After Cedar Point, we drove over to Kirtland, OH and spent two days there seeing all of the church history sites. It was a lot of fun. Eduardo hasn't really seen very many church history sites, so it was a really neat experience to watch him throughout the tours. I was really grateful that my mom took the time to come see me and spend so much one on one time with me. It had been awhile since I was afforded that luxury, and it's something I cherish.

**That is the Kirtland temple behind us. It's sad to see it owned by those who do not treat it with the reverent respect it deserves. However, we were grateful to be able to take a tour and learn more about its history**


Here is the whole gang in front of the Whintey store. The store still had the original doors that the Prophet himself once touched. Very cool :)



CEDAR POINT!!! Seriously...so much fun.



3. We registered for, hopefully what will be the LAST semester of school in Idaho! After this semester I will be DONE with all my classes, and will simply have student teaching left, and Eduardo will have his associates degree. The plan is for him to transfer to BYU-Provo for this upcoming winter semester. We'll hopefully be able to find someone to take over our lease for our apt in Idaho and find a new apt in Provo all within about a months time. (We can't even apply to move into the on-campus married housing in Provo until he can prove he is a student, which we won't know the status of his application until mid November!) Ack. That brings me stress, so I'm choosing to simply not think about it.





4....No, there is nothing else. We are now in the process of finishing up work here and doing the last of our tourist type activities since we plan on moving back to Idaho in less than two weeks! In two weeks from right now we will be with some of our best friends, Jay and Leeann, and then family, family, and more family!




Overall, Kentucky was definitely an answer to our prayers. Not just for the money, but for lots of things. It amazed us throughout the summer how many small tender mercies we were able to see each day. It will be sad saying goodbye, but we're ready to move on and be with family again.

Time to catch up!



It has been a crazy semester! We are definitely ready for it to end. School is going great for both of us, and Eduardo is doing amazing things in some of his art and design classes! And I am loving teaching kindergarten. I always wanted to stick with preschool or first grade, but I'm starting to think that I might prefer spec. ed. kindergarten. I have one little boy who is certain he'd be a better husband to me because he'd make me cookies every single day. Haha, cute kids. Also as a side note...It is officially official, we are MOVING TO KENTUCKY this summer!!! Eeeek! I'm excited and a little sad all in one. We were both looking forward to being by our parents and diana this summer, but a little adventure sounds pretty fun :)
We decided we will go to Nauvoo for two days on our drive over since it's just a small detour, and I'm really excited about that! We also will be living just over 5 hours from Kirtland, Ohio, so we're thinking of taking a weekend to go see the temple there and some church sites. Other than that...everything is same 'ol same 'ol. Here are a bunch of pics from the last few months...and a few we just really like :)

Happy Thanksgiving!









Happy late Thanksgiving!
We were able to drive down to Utah for several days and stay with Kimberly (Candice came too!). It worked out perfectly for us because we spent our days with his family that came up, and spent the nights with my sisters :) We loved playing with the kiddos, but we missed little Donny and Lyla. Having almost the whole family together was so much fun though! It was the best Thanksgiving yet! We loved being able to spend time with our families, and we definitely LOVED Thanksgiving dinner! Yummm! Now the only problem is we are getting super impatient waiting for Christmas to come already!
